I have found an amazing recipe for you.

Funfetti cake recipeI have make this recipe countless times and it has always turned out amazing. It’s quick and easy and absolutely delicious. I think the yogurt in it makes it nice and moist and gives it good flavour. You can use any kind of yogurt. I usually use natural yogurt or vanilla flavour.  Sour cream works too.

Same with the milk.  I use regular full cream or light milk, but you can use soy or almond milk too.

The cake stays moist over a few days (ours is always eaten before then anyway) and has a really yummy buttery taste.  The flavour is addictive.

I don’t always put the sprinkles in the actual cake mix like she suggests, but I do ALWAYS sprinkle them on top of the icing.

I make my Funfetti Cake in a small bundt tin but Sally suggests a springform tin or square or round baking pan….whatever is in your cupboard!  I have also used this recipe for cupcakes and they have been a hit.

Actually, I am posting this recipe because it’s a request. A very good friend of mine came to stay at our place for a few days a while ago with her husband and 4 children. We had been be out and about one day and came home around afternoon tea time.  What was I going to feed the hungry hoards?? I whipped out this recipe because it’s one that I can mix up quickly while I chat to my friend and I know it always turns out well. Once it was out of the oven and icing slapped on, the kids devoured it in a matter of minutes and it was deemed a success!  I recently got a message from my gorgeous friend, asking for this recipe.  Well Jo, here it is!

    Hi, I really want to make this recipe for my son’s bday and love the way the bundt cake looks. Did you double the recipe for the one in the photos? What temp and how long did you cook for this pan? Thanks so much!

      Hi Courtney,
      I’m so excited that your son will get this cake for his birthday! I made it this week for a girlfriend’s birthday actually. It’s such a beautiful cake. The bundt tin I use is quite small, measuring just 12cm across the base (out to 20cm at top) so I don’t double the recipe, but if your tin is bigger then I would double it to be sure. In the small bundt tin I bake the cake at 180°C (moderate oven) for 45 minutes and it’s perfect every time. I hope this cake turns out well for you and you love it as much as we do!!
